Spinach, Mango, Pineapple Smoothie
Avoiding red meat means avoiding one of the easiest and richest sources of iron. That said, how the meat is cooked also affects the quality of iron and what it's paired with has an effect on how much iron our bodies actually absorb. This is why I love this smoothie! Full of rich green spinach and lovely yellow mango and pineapple which os full of vitamin C to support the absorption of iron.
Anyone that's had to deal with aneamia would habe heard the "a glass of orange juice to wash it down" advice. This is a great simple recipe that works for sipping all morning or even as an after meal digestif. Enjoy!
Ingredients
A handful of spinach
40g pineapple
40g mango
1 lime
1/2 cup water
1/2 cup ice
Honey to drizzle the glass to serve
For a thicker smoothie, add a small apple
Note: If using a traditional blender, the greens go in first, if using a nutri or ninja, greens go last i.e. always closest to the blades. - Pop it all in the blender cup/jug and blitz for at least 15seconds.
- Drizzle honey around the glass and add some more ice if desired then pour in the smoothie and voila!
