Spicy Pork Ribs
I love fall-off-the-bone ribs. They absorb all the flavour and richness of whatever they're cooked in and give me an excuse to make like a toddler and get stuck in to the grub on my plate! This recipe is perfect for lazy evenings but they do need a minimum of 90mins to cook to achieve true finger-licking tenderness.

500g pork spare ribs
3 tbsp soy sauce
2 tbsp tomato puree
2 tsp paprika
1 tsp nutmeg
1 tsp dried oregano
1 tsp black pepper
1 star anise
1 low salt organic stock cube
1 tsp cayenne pepper
1 tsp garlic salt
200ml water
2 tbsp coconut sugar or soft brown sugar
- Preheat the oven to 195°C/175°C fan oven.
- Combine all but the ribs, water and sugar in an oven safe dish until you have a smooth paste.
-Add the water and mix together until well combined then add the ribs making sure they're well coated as you add them.
- Cover tightly with foil and place into the centre of the preheated oven for 90mins. 75mins will suffice but if you've got the time, those 15mins are worth it!
-Remove from the oven when the time is up and uncover. Don't worry about the burnt on sides...they add to the smokey flavour. Sprinkle the coconut sugar over the ribs, cover and return to the hot oven for 5mins whilst you plate up your chosen sides.
