15 minute Bolognese Sauce

Two of my favourite people choose spaghetti bolognese as their favourite meal! I love a good spag bol but it can get a little boring so I tend to switch up the veg in the bolognese to keep it interesting!

There are a few standard ingredients required for a decent bolognese....minced beef, tomatoes, carrots, onions, garlic, and basil. I personally don't add red wine to my sauce because I really don't think it's necessary plus I prefer it in a glass whilst I'm working on dinner😄

So here's my simple tasty recipe with a good helping of aubergine (eggplant to the'mericans!). Hope you enjoy it as much as we did. Chopping up the veg took me literally 2 minutes so add that to the total cooking time and you've got exactly 15 minutes start to finish! It's a less "saucey" version because funnily enough, both of my loves enjoy it more meaty. The things I do for family eh?!

Bolognese Sauce - Makes 2 Servings

250g lean minced beef

1 small sliced onion

2 sliced cloves garlic

1 sliced habanero chilli

1 maggi cube or stock cube (vegetable or beef)

1 tsp coarse ground black pepper

1 tsp dried thyme

1 tsp dried basil

1 tsp paprika

1/2 tsp salt

1 small roughly chopped aubergine

2 chopped skinny carrots

1 beef tomato

1/2 tbsp olive oil

250g passata (if you like your sauce wet, use 500ml and a large frying pan-no time adjustment)

1/2 tsp soft dark brown sugar

 

- Boil the water for your pasta. About a litre and a half.

- In a medium sized frying pan, on a medium high heat, brown the mince and drain the fat. This will take about 3 minutes.

- Add the onions, garlic, stock cube and chillies to the mince and cook on a medium heat for 2 minutes, stirring it all together.

- Whilst the sauce is simmering add a little salt and your pasta to the water and leave to boil for 8 minutes or till al dente.

- Add all but the passata and sugar to the pan and simmer for 3 minutes.

- Add the passata and sugar and simmer for 5 minutes.

- C'est fini! All done! Enjoy with mozzarella or parmesan sprinkled on top or stirred through your pasta!

P.S. If you don't like your pasta al dente, you'll need to boil the water before you start prepping your veggies so that it's all ready at the same time.
