Sticky, Spicy Ribs

These ribs are so good!! I went through a month of enjoying them once a week because I just enjoyed them so much! I'm not fond of getting takeaways. I would much rather sit in a restaurant and enjoy the service and ambience and presentation.


One of my favourite places in London is Princess Garden of Mayfair on Audley street. My dad took us there many years ago and it became the convenient and trusted venue for special occasions in London. The best thing about it is that it's about halfway between Marble Arch and Bond St stations so it's the perfect spot to refuel after a long "walk"!


Let me get back on topic... These ribs are the perfect balance of spicy and sweet and they have a wonderful stickiness that I love. They go through 3 cooking stages to get them perfectly tender on the inside and perfectly crispy on the outside whilst retaining their stickiness and having a smoky goodness without needing to set foot outdoors. I'm going to get right to it though because my mind is already cooking up various adaptations of this recipe but that's for another post. Enjoy!


Recipe - Serves 2-4


750g pork spare ribs

2 tbsp honey

2 tbsp dark brown sugar

1 tbsp ground allspice

1 tbsp sichuan pepper

1inch piece ginger, grated

1 tsp serrano chillies

2 cloves minced garlic

1 small onion, finely chopped

1 tbsp paprika

1 tbsp olive oil

 

- In a large pot, mix all the ingredients into a thick paste then rub into the ribs.

- Cook on a medium heat for 15minutes then transfer into an oven safe dish and bake at 170°C for a further 25 minutes.

- Move the dish to the grill, drizzle with a tablespoon of honey and finish off the cooking process.
